As the summer wanes and you want just a few more miles out of your summer fruit, here’s a refreshing cocktail that incorporates end-of-season peaches and basil.
Ingredients
Serves Two
4 oz. fresh peach juice
8 basil leaves
2 Tbsp. of maple syrup
8 oz. whiskey or bourbon
2 egg whites
6 ice cubes
Angostura bitters
Basil leave and peach slice for garnish
Directions
Muddle the peach juice, basil leaves and maple syrup and muddle them in a cocktail shaker. Strain the liquid, empty the shaker, and place the strained liquid back in the shaker.
Add the two egg whites and vigorously shake for 30 seconds. Gently release the pressure from the shaker top.
Add six ice cubes and shake again for another 30 seconds.
Fill each glass with a large ice cube and pour your cocktail.
Wait until the foam floats to the top of the drink then add four drops of bitters into each glass. Garnish with a basil leaf and a peach slice.
