What’s one thing your customers don’t know you do behind the scenes?
We cup the teas and coffees beforehand, which means tasting each delivery, particularly the coffees; they’re not always the same from season to season.
What’s something you do that seems small but makes a huge difference?
We dial in the coffee recipes with the changing weather because it’s sensitive to the humidity. The dial on the grinder determines the weight, size and duration of the grind. We need to dial in every morning so your experience is the same here and so our extraction rate is consistent.
If you weren’t doing this, what would you be doing instead?
I’d be running another kind of business, possibly a spa products business with my wife.
What’s the best advice you ever received?
Someone told me once: “Don’t say you think if you know and you know if you think.”

Specialty tea coffee.
What’s something your business does differently than anyone else?
Opens at 5 a.m. daily, daily botanical (+tea+coffee) inspired house-made baked goods, a lot of careful sourcing from fair trade, organic and farm-certified coffee and tea farms, 24 loose-leaf teas and 20 organic pour-over coffees, single-origin and blends.
What’s one thing people often say when they first walk in?
They usually comment on the vintage 1940s, European-style feel of the place.
What is your most popular item/service?
It’s a toss-up among lattes, cappuccinos and cortados—and our botanically-inspired house-made baked goods. I know you said one item but it isn’t just one item.
