What is the first thing you do when you open for the day?

The first thing I do is check on my wellbeing. I need to make sure that I’m happy with myself before I start the day. Then I check the ingredients. I will personally check on my inventory of fresh, raw seafood. 

What was your “I made it” moment?

Westchester food magazine made Dai Sushi number one. 

Tell us about your favorite local spot. 

My favorite local spot is the local fish market.

If you weren’t doing this, what would you be doing instead?

I would still be a chef working in the restaurant, because I love cooking, especially when I see customers enjoying the food I prepare for them  

What’s the best advice you ever received?

Hard work pays off.

What’s the one thing your business couldn’t function without? 

My trusted employees and my loyal customers.

What’s one thing people often say when they first walk in?   

“It’s a very small restaurant, and also very busy.”

What is your most popular item/service?  

The Crispy Rice Appetizer.

What is something you wish more people knew about you and/or your business? 

I wish that more people knew that my business isn’t just from 12 p.m. to 9 p.m. When I go home, I constantly think about what the freshest fish is for tomorrow, what fresh ingredients I’m going to need.
