What’s your dream customer reaction?
We really strive to make sure that everyone is not only just satisfied with the experience but that they’re literally over the moon and they leave here raving about every single element of the experience—not just the food, not just the service, not just the ambiance but how those three big things come together to create this magical experience. The specific word magical always comes to mind when we’re trying to create things.
What’s the smallest detail your customers notice or that you hope they notice?
The way we take care of the space where they’re joining us; we call it table maintenance. It’s the minutest of things, like if a piece of straw wrapper were to fall on the table. We make sure the entire space is pristine so the customer can enjoy their experience.
Is there something that you do differently compared to anyone else?
Sunday Hospitality, which is the restaurant group, really leans into the training element for everyone, making sure everyone gets all of the tools they need to be set up for success. It changes the entire guest experience.
Is there something that people often say when they first walk in?
When they walk into the main dining room, they say, “It’s so cozy.” They often ask to sit in the corner near the fireplace.
What is a word or phrase people often use to describe your business?
Amazing. They say it’s one of the most amazing experiences they have around here. There aren’t that many restaurants in this area, so they are thankful we’re in the neighborhood.
What’s your most popular item?
The popovers, hands down. We make them in-house. They’re not like any other popover you’ve ever seen. They’re like popovers on steroids. And we serve them with a spiced butter on the side.
If your restaurant had a theme song, what would it be?
We play a lot of Motown, and any Marvin Gaye song on our playlist would make a good theme song.
How do you celebrate a big win?
We celebrate our staff’s wins daily at the pre-shift meeting. We talk about the food, the beverage, the VIPs we have coming in, and then we always do a moment of celebration, which makes a huge difference. People are always pointing out the negatives in the world, and it’s really nice to point out the positives.
